French Lentil Soup

Ingredients

  • 1/4 cup canola oil
  • 3/4 large white onion
  • 1 clove garlic
  • 5 celery stalks, chopped
  • 7 carrots, chopped
  • 1 1/2 cups dried lentils
  • 1/4 cup red wine
  • 7 cups water
  • 3/4 tsp. pepper
  • 1 tsp. salt
  • 4 sprigs thyme, removed from stems
  • 1/4 tsp. ground turmeric
  • olive oil and sprigs of extra thyme, for garnish

Directions

Step 1

  • Sautee onion, garlic, celery, and carrots in the canola oil until onions become slightly caramelized.

Step 2

  • Add the rest of the ingredients, with the exception of the olive oil and extra thyme. Cook on medium to high flame for 60-90 minutes, until lentils are soft.
  • Drizzle with olive oil and garnish with sprigs of fresh thyme.
